Today it’s my Blog Tour Stop with a recipe and review of One Summer in Italy by Sue Moorcroft (one of my favourite authors). And let me tell you the recipe looks super delicious.

Recipe:

Recipe One Summer in Italy

 

Levi’s Bruschetta

1 large crusty baguette

250g cherry tomatoes

Half a small red onion

2 to 3 cloves of garlic

Fresh basil

Balsamic vinegar

Extra virgin olive oil

Salt and pepper

 

  1. Coarsely chop the cherry tomatoes into around 1/8 size pieces, and finely chop the half red onion
  2. In a large bowl, add the onion and tomatoes and grate or crush the garlic over the top. Mix them all together, taking care not to break up the tomatoes too much.
  3. Drizzle olive oil and a couple of tablespoons of balsamic vinegar over the top.
  4. Season with salt and pepper
  5. Mix everything together and taste – add more seasoning or vinegar if necessary.
  6. Cover and refrigerate the mixture for at least an hour to allow the flavours to soak and blend together.
  7. Slice the baguette loaf diagonally into thick slices and lightly toast the slices until they are light brown on both sides.
  8. Serve the refrigerated mixture onto the toasted baguette while warm, and top with fresh basil leaves.

 

Review:

If I’m being honest anything that involves Italy is a winner for me. So when I was asked whether I would review One Summer in Italy I obviously leapt at the opportunity.

Not only is One Summer in Italy set in a gorgeous location, that seriously gave me holiday envy, it is also a really uplifting book. One that instantly put a smile to my face.

On his deathbed, Sofia’s father asks her to promise to do several things. One of which is to go to Italy. And so Sofia sets off to fulfil her father’s wishes.

Along the way she meets some amazing people, sees some fantastic locations and learns a lot about herself.

This is a really enchanting read that made me desperate to go back to Italy!
